Easter Sunday was extra special this year because it was also the day my hubs came home after 3 long and crazy months of being on tour. I knew he'd be tired after countless long work days and sleepless nights, so I wanted to make sure he came home to a clean home, good meal and relaxing vibes.
I am a planner, so I decided on our Easter menu a couple weeks ago. I wanted something with spring ingredients but still hearty, rich in flavor but not labor intensive. I wrote out our menu HERE and myself, along with our guests, were very pleased with how it came out.
Can we just take a moment to appreciate that brilliant, beautiful salad and acknowledge that fact that I roasted a whole chicken for the very first time? I was always intimidated by the thought of it but the recipe was fool proof and so delicious. I don't generally eat meat, but felt good about it for this meal once I saw that Sprouts had 4lb organic, free range chickens WITHOUT the gizzards (thank heavens!) for only $13! Hello.
Good wine, good friends, good food, and a happy home now that the hubs is here to stay - we ended the night watching a movie with our friends, eating carrot cake and easter candy. For a holiday away from family without all the traditional church, new outfit, and egg hunt, it was still an Easter for the books.
