Last year, I bought a crock pot that sat in my cupboard and collected dust. That's what they are supposed to do, right? When we moved across country in our little baby Prius, the crock pot was not one to join us considering our history together. But alas, the cooler seasons came like they always do and all I could think about were soups and stews, and while I am ever so faithful to my white enamel dutch oven (that I got for $25!!!), I really wanted (and needed) something a bit more effortless. So you know what that means. . .crockpot round two. After long days at work, all I ever wanted in life was a hot and hearty dinner waiting for me and my husband that neither of us actually had to cook. While it can be a treat to walk in to the house with a husband whipping us up something to eat in the kitchen, it can be a bit overwhelming to the see kitchen in the state that it is when he cooks and risk the potential of a meal being burnt because he likes it extra crispy and I'm like, no. Plus, if he cooked that meant I had to clean up! Another no. Therefore, crock pot win!
All this to say, I've discovered a few crock pot meals that are tried and true, so I thought I'd share the ones we go to on the regular. They aren't all healthy and vegan because sometimes in marriage you have to compromise but they are still tasty none the less. And while I am here I will add, crock pots with preset cooking times is the only way to go. If I'm out of the house for 10 hours but the recipe calls for an 8 hour cooking time, it automatically goes to the "warm" setting after 8 hours! Yay for no overcooked meals!
Crock pot dinners
Spaghetti Squash with marinara sauce, green salad, and sourdough toast
Cream Cheese Chicken Chili with blue corn tortilla chips
Sweet Potato Soup served with sourdough baguette and a charcuterie board (I used almond milk)
Teriyaki Chicken served with jasmine or cauliflower rice and garnished with sesame seeds and cashews
Basil Chicken in Coconut Curry Sauce served with jasmine rice and limes
Seasoned Chicken with vegetables
